Bacon Sea Scallops

 Ingredients

  • 12 large Scallops
  • 12 slices of smoked bacon
  • ½ bread crumb
  • 2 tablespoon parmesan cheese
  • 1 tablespoon Jerk Dry Rub
  • 1 tablespoon chopped parsley
  • 2 tablespoon olive oil

Directions

  1. In a medium bowl, mix bread crumb, parmesan cheese, jerk rub & chopped parsley set aside.
  2. Wrap each scallop with piece of bacon. Secure with toothpicks.
  3. Drizzle each bacon wrapped scallop with olive top and bottom.
  4. Then dip each bacon wrapped scallop in bread crumbs mixture to cover top and bottom.
  5. Place in baking dish and bake at 425°F, turning once for 20 to 25 minutes or until done.

Serves 4 - 6.   Enjoy!
