Bacon Wrapped BBQ Pork Medallions


  • 2 medium pork Tenderloins
  • 16 slices smoked bacon
  • 1 Tablespoon Cajun seasoning
  • ½ cup of Eadrey's Apple Ginger B.B.Q Sauce



  1. Preheat oven to 350° F.
  2. Clean pork tenderloins and remove fat.
  3. Slice tenderloins into medallions 1 inch wide (each tenderloin should make about 8 medallions).
  4. Put medallions into a bowl, add Cajun season with ¼ cup B.B.Q sauce.
  5. Wrap each medallion with a slice of bacon.
  6. Assemble each medallion securely on a stainless steel skewer, 4 pieces per skewer.
  7. Place skewers on roasting rack over a baking sheet.
  8. Cook for 20 minutes, (10 minutes on each side), brushing with rest of B.B.Q sauce.
  9. Take out of oven and serve.
