Baked Salmon With Curried Chick Peas

  Ingredients

  • 4 Salmon Filets (6 ounces each)
  • 1/2 cup of Peppercorn Marinade

Curried Chick Peas

  • 1 can chick peas
  • 1 medium onion
  • 1 clove of garlic
  • 2 tbsp olive oil
  • 2 tbsp curry powder
  • 1 tsn salt
  • 1 tsp ground black pepper
  • 1 cup boiled water

Directions

  1. Preheat oven to 350° F
  2. Place Salmon skin side down in a baking dish.
  3. Pour Peppercorn Marinade evenly over Salmon and place in oven.
  4. Bake in oven for 30 minutes until brown.
  5. While Salmon is baking, prepare the Curried Chick Peas.
  6. Also, can be served with sautéd spinach .

Directions - Curried Chick Peas

  1. Chop the onion into cubes.
  2. Finely chop the garlic. 
  3. Heat oil in a sauce pan over  medium heat.
  4. Add the curry powder, onion, garlic, salt , and pepper.
  5. Sauté for 3 minutes, stirring constantly. 
  6. Add chickpeas and 1 cup of  hot water. 
  7. Cover sauce pan and simmer for 20 minutes.

Serves 4.   Enjoy!
