Blackened Catfish


  • 2 catfish fillets
  • 1 tablespoon chipotle bbq rub
  • ¼ cup olive
  • ¼ cup olive oil
  • Lemon for garnish


  1. Melt butter and olive oil together.
  2. Place chipotle rub in a shallow bowl.
  3. Dip catfish into the butter and oil and then dredge on both sides in the chipotle rub.
  4. Heat a black iron frying pan for at least 10 minutes over very high heat.
  5. Place catfish in iron frying pan cooking for 4 minutes on each side.
  6. Transfer the catfish fillets with spatula to serving platter and serve them with the lemon wedges.
