Chipotle Chicken Fingers


  • 6 skinless, boneless chicken breast halves
  • 1 cup of bread crumbs
  • 1/4 cup of Chipotle BBQ Dry Rub
  • 1/4 cup of Olive Oil
  • 1 tablespoon chopped parsley


  1. Cut the chicken breasts into long 1/2 inch strips.
  2. Mix bread crumb & Chipotle BBQ dry rub together in a small bowl and set aside.
  3. Put chicken strips in a large bowl.
  4. Pour olive oil over chicken.
  5. Dip each chicken strip in the bowl with bread crumb mixture.
  6. Arrange chicken strips on a baking pan.
  7. Bake for 30 minutes at 350°F.
  8. Remove and serve.
