Grilled Stuffed Squid

 Ingredients

  • 4 whole Squid
  • 1 cup finely chopped red tomatoes
  • ¼ cup Kalamata olive oil
  • 1 tablespoon finely chopped capers
  • ½ onion (chopped finely chopped)
  • 1 garlic clove, finely chopped
  • 1 tablespoon Jerk Dry Rub
  • ½ Bread Crumb
  • 1 tablespoon olive oil
  • 1 lemon
  • extra (2 tbs) olive oil for drizzling

Directions

  1. Clean whole squid pull the tentacles firmly to separate head from tube.
  2. Wash inside of squid thoroughly.
  3. Heat Kalamata olive oil and sauté onions, garlic,tomatoes, capers, olives & bread crumbs.
  4. Add jerk rub to mixture.
  5. Spoon mixture into the squid body, leaving 1cm at the top to secure with a toothpick.
  6. Drizzle squid with olive oil.
  7. Grill & cook squid, turning until golden and squid is just cooked through.    Make sure to also gGrill tentacles.
  8. Serve with fresh lemon wedges!
