Jerk Chicken Mini Burgers


  • 8 Mini Buns
  • Sliced tomatoes
  • Lettuce
  • 2 tablespoon Eadrey's Jerk Rub
  • 1 teaspoon olive oil
  • 1/4 cup of bread crumbs
  • 1 lb. lean ground chicken

 Carmelized onions ingredients

  • 1 tablespoon olive oil
  • 1 large onion (caramelized onion)
  • salt/pepper


  1. Slice tomatoes and prepare lettuce as per your style.
  2. Cut each slice of cheese in half.
  3. In a large bowl, add chicken, bread crumbs, oil and Eadrey's Jerk Rub.
  4. Combined together.
  5. Form the mixture into 8 patties, each about 2 inches in diameter.
  6. On a preheated BBQ, place all 8 patties and close lid.
  7. Turning only once until juices run clear, cooking for about 20 minutes, (10 mins on each side).
  8. While patties are cooking, carmelize the onions as follows;
  9. In a skillet, heat olive oil over medium heat.
  10. Sliced onions and place on the hot skillet.
  11. Slowly cook until they are richly browned, stirring occasionally.
  12. Once patties are cooked and onions carmelized, assemble patties, lettuce, tomatoes and onions on the buns.

    Serve with Grilled Corn & Mango Salsa
