Potato Crusted Salmon


  • 6 Salmon Fillets (4 ounces each)
  • 3 large potatoes
  • 3 tbs Eadrey's Chipotle dry rub
  • 2 tbs olive oil


  1. Wash, peel and grate potatoes.
  2. Add in 1 tablespoon of dry rub onto grated potatoes and toss together.
  3. Place salmon skin side down on a cutting board or a work station.
  4. Sprinkle rest of dry rub (2 tablespoon) on each salmon fillet.
  5. Press the grated potatoes onto salmon the firmly.
  6. Add olive oil to a non stick frying pan and heat at medium.
  7. Place salmon gently crust side down in frying pan.
  8. Cook salmon for 3 minutes on medium heat until potatoes are golden brown.
  9. Flip to the skin side down and finish cooking in the oven at 350 for 10 min until potatoes are cooked.

    Serve with Chipotle Mayonnaise (1 tablespoon Eadrey's Chipotle Dry Rub and ½ cup of mayo)
