Stuffed BBQ Chicken Legs & Thighs


  • 4 Joined chicken legs and thighs
  • 2 tbs Jerk Dry Rub
  • 1 pkg. Cornbread Stuffing Mix for Chicken


  1. Make the cornbread stuffing by following the Stuffing Mix recipe and set aside.
  2. Place boneless chicken legs & thighs on a cutting board.
  3. Sprinkle Jerk Dry Rub all over the chicken on both sides.
  4. Place face down the side that the skin was removed from (usually this would be the "outside" side).
  5. Put 2 tablespoon of stuffing mix into each leg & thigh.
  6. Roll and secure with toothpick.
  7. Arrange chicken legs & thigh on a baking dish until completed then set aside.
  8. Pre-heat BBQ to medium heat.
  9. Place stuffed chicken legs & thighs on the BBQ and grill for 40 minutes turning occasionally every 5 minutes until golden brown.
  10. Allow to rest for 10 minutes and remove tooth picks.
  11. Cut in 1/2 inch slices or serve whole.
  12. Serve with a salad as a main course.
