Stuffed Mushroom Caps


  • 1 lb Ground Pork
  • 24 medium cremini mushroom caps
  • 1 onion
  • ¼ cup Jerk Marinade
  • 1 table spoon olive oil
  • ¾ cup of bread crumb
  • 1 table spoon Jerk Marinade (for brushing mushroom caps)

Bread Crumb Mixture

  • ¾ cup of bread crumb
  • Salt & Pepper
  • 1 tbs chopped parsley
  • 1 tsp olive oil

Directions - Prep Work

  1. Mix together bread crumb, salt, papper, chopped parsley and olive oil.
  2. Set aside for mushroom caps.
  3. Clean mushrooms thoroughly and pat dry.
  4. Remove stems
  5. Finely chop stems, onion & garlic and sautee in olive oil.
  6. Add ground pork and cook for 20 minutes on low heat.
  7. Stir in most of bread crumb mixture to the ground pork mixture – mix well.
  8. Cook for 10 more minutes until soft.
  9. Set aside.

Directions - Mushroom Caps

  1. Brush Mushroom caps all over with 2 tablespoons of Jerk Marinade and place on a baking sheet for pork filling
  2. Brush all over mushroom caps.
  3. Scoop 1 tablespoons of Pork mixture and press unto mushroom caps
  4. Top mushroom caps with remaining bread crumb mixture.
  5. Choose either to grill on BBQ or bake in the oven.
  6. To Grill: Place baking sheet of mushrooms on top of B.B.Q grill and grill for 15 minutes until top is golden brown.
  7. To Bake: Place baking sheet mushrooms in baking pan and oven bake for 20 minutes until top is golden brown.
