Stuffed Pork Chops

 Ingredients

  • 4 boneless 5-ounce pork chops about 1 inch thick.
  • 3 tablespoon Jerk Rub
  • 1 tablespoon olive oil

Stuffing  Ingredients

  • 1 Apple, cored and diced
  • 1 teaspoon Jerk Rub
  • 1 green pepper, diced
  • 1 onion, diced
  • 1 ½ cup day-old bread cubed
  • ¾ cup chicken broth

Stuffing Directions

  1. In a medium skillet heat 1 tablespoon olive oil
  2. Add onion, green pepper & apples and sauté until soft
  3. Add Jerk Rub
  4. Transfer mixture to a bowl and add bread cubes and chicken broth
  5. Mix and set aside

Pork Chop Directions

  1. Preheat oven to 400°F.
  2. Slice pockets into chops by slicing horizontally into the side.
  3. Pour 2 tablespoon olive oil all over pork and coat with jerk rub.
  4. Massage jerk rub all over pork chops.
  5. Stuff pork chops with stuffing.
  6. Heat 1 tablespoon olive oil in large skillet over medium heat.
  7. Add pork chops and sear on each side until browned 4 minutes.
  8. Transfer to oven and finish cooking for 15 minutes.
