Stuffed Trout

 Ingredients

  • 1 whole trout
  • 2 tablespoon Jerk Dry Rub
  • 2 medium sweet potatoes
  • 2 tablespoon olive oil
  • 1 tablespoon Jerk Dry Rub
  • 2 lemon slices
  • 2 carrot sticks (optional)
  • 5 aparagus sticks (optional)

Directions

  1. Preheat oven to 350°F
  2. Cube or dice sweet potatoes as shown.
  3. In roasting pan, combine sweet potatoes, olive oil and 1 tbs of dry rub and toss all together.
  4. Place mixture in a baking pan and roast for 30 minutes turning sweet potatoes occasionally.
  5. Cool for 15 minutes before stuffing trout.
  6. Rinse inside of trout then pat dry with paper towel.
  7. Massage in the remaining 1 tablespoon of dry rub evenly over trout.
  8. Spoon sweet potatoes into inside of trout and spread evenly.
  9. Place trout on a baking sheet.
  10. Bake for 20 minutes.
  11. Optionally, roast carrots and asparagus as shown in pictures to go with dish.
  12. Cut lemon slices in half and place on top of trout.

Serves 1 - 2.   Enjoy!
